PAUL IN PENNSYLVANIA JULY 29
INFO: CLICK FOR INFO
Howdy Folks,
It is with great sadness that I inform those of you who have not heard that Tim passed away on July 7. This leaves his 13 year old daughter Grace with no parents. Our party will continue as a loving memory to our good friend Tim, and pledge of support for Grace.
I encourage you all to come out and have a wonderful time in the Endless Mountains on Sunday, July 29 from 11 AM to 6 PM. Food, booze, and music are all provided with your donation, and those under 21 are admitted free. Plenty to do for the kids and adults, so mark this date on your calendar.
As a special treat, members of my band will be joining us from New York City, where they are a part of the Original Broadway cast of Jersey Boys, the multiple Tony Award winning hit show. I am looking forward to seeing you all, and hope you can make it for the benefit.

July 6, 2007.
The Tim O'Neill Benefit Fund Committee is announcing that a benefit to assist his daughter Grace will be held on the grounds of the Browndale Sportsmen's Club, from 11:00 AM to 6:00 PM on July 29, 2007.
The day will include a barbecued chicken dinner, hot dogs, hamburgers and beverages. There will also be games, children’s activities a silent auction and over 70 other prizes. Paul Hayward, a recording artist from California (and a friend of Tim’s) and Mercy for the Gimp (a local popular band) will provide live entertainment starting at 1:00. In addition to the food, beverages and entertainment, each ticket-holder is entered into a drawing for a week long stay in a condo in Antigua and a chance for one of the dozens of door prizes. Tickets are $50.00 per person – those under age 21 are free.
Tim O'Neill, 41, was the father of 13-year-old Grace. He became a widower last fall when Ann Marie, his wife of 15 years, passed away after a lengthy illness. Tim was diagnosed in April with a disease that took his life on June 7. Even with insurance coverage, significant unpaid medical expenses remain and Grace now prepares for the rest of her life without either parent.
Born and raised in Pleasant Mount, Tim lived in Avoca for the past 15 years. He was employed as a nurse at SCI Waymart for 16 years. Prior to that, he worked at the Community Medical Center in Scranton.
Companies and individuals have stepped forward as Corporate Sponsors of the event. With a Corporate Sponsorship donation of $500, they receive 10 tickets to the benefit to give to whomever they choose. In addition, their name is listed on the “Corporate Sponsor” Board that will be displayed at the event and every ticket is entered into the drawing for the one week condo stay in Antigua.
A Website – www.timsfund.org - contains information on Tim, Grace and the benefit and will be updated as more information is available.
A fund has been established and contributions can be made to TUFF (Tim’s Ultimate Fighting Fund) or the Tim O’Neill Benefit Fund, c/o The Honesdale National Bank, PO Box 350, Honesdale PA 18431.

Drink of the Month: The Simple Key Lime Pie
OK, this may seem like I'm phoning it in, but I've got a lot of mileage out of this shot. Folks from down south naturally love it, it's a vodka based shooter for the neutral drinker, and best of all a reason to engage internationals on the patois of our large nation ("what's a Key Lime?"). There are many versions of this drink, but certainly none more swift than the following.
2 parts Stoli Vanil Vodka. Has to be Stoli Vanil
1 part sweet & sour mix
1 part Rose's Lime Juice
Shake with ice, strain, serve
This Month's Recipe: Dal For 6
Indian food kicks ass. Uhhh, sometimes literally. Not to fear, boys and girls, here's an easy recipe that will wow the neighbors, and as usual, no dead aminals. One note: if you use black or green lentils instead of red, cook 'em for another 10 minutes.
Ingredients
* 2 cups red lentils
* 2 TB olive oil
* 1 yellow onion, finely chopped
* 1 tsp cumin seeds
* 1/4 tsp ground cardamom
* 4 cloves garlic, minced
* 4 cups vegetable broth or chicken broth
* 11/2 cups chopped tomatoes with their juice
* 1/3 cup chopped fresh cilantro
* 2 TB minced fresh ginger
* 1 fresh jalapeno pepper, minced
* 1 tsp ground turmeric
* 1 tsp salt
Preparation
When sorting beans and lentils and such, you should check them out before the boil. Just spill them out on a surface or in a pot and make sure there are not freaky characters or worse yet rocks, then rinse them.
After that deal, heat the oil in a large heavy bottom 5-quart pan over medium-high heat, and sauté the onion until golden brown, about 5 minutes. Add the cumin seeds, cardamom, and garlic to the pan and stir until the spices are just fragrant, about 2 minutes. Add the broth, tomatoes, lentils, cilantro, ginger, jalapeño pepper, turmeric and salt. Bring to a boil over high heat; reduce the heat to low, cover, and simmer, stirring often, until lentils become soft, about 15 minutes. Serve with warm Nan.
Belive it or not, this dish, as with most Indian and Pakistani dishes, are best accompanied by your average Beaujolais nouveau. Enjoy, and drop me a line if you have any problems.
